Weekly Wellness: Recipes I Have Tried Recently

Happy Thursday everyone! I don't know about you but this week seems kind of long. The whole week I kept thinking it was a day later than it was. We can do it though only one more day! Today I thought I would sit down and share some recipes I have tried recently for something a bit different. My wellness posts have been all about me but know that you know my story, for the most part, I want to start exploring different tops. So I thought I would share some recipes I have tried recently. If you don't know as of last spring I started following a gluten free, dairy free, low sugar diet plus I also have a nut allergy. So it can be a struggle to find good tasting recipes I can eat so needless to say Pinterest has become my best friend.

Apple Cider Donuts // With the fall weather and going apple picking I was craving an apple cider donut. So I did some searching online and found this recipe and they came out really good! They legit tasted like apple cider. The only thing was I probably could have let them cook a bit longer but I didn't want to burn them.

Sweet Potato Tacos // This is basically just a meal idea not a super strict recipe. I just thought it was a cool idea to have a sweet potato with taco toppings. You can add whatever you want to make this yours but it tasted actually quite good with the sweet potato!

Pumpkin Chocolate Chip Bread // This bread tasted SO GOOD and turned out way better than I thought it would. The recipe called for almond flour but I just used Trader Joe's gluten free flour in place of it with the same amount and it turned out great. I wasn't sure how it would react but it was totally fine. I also did not add the nuts to the bread.

Apple Chips // This recipe was inspired by some store-bought apple chips my coworker brought in. They tasted really good so I looked up a recipe and found this one. They didn't totally turn out. They tasted ok but the never fully turned into chips. The key is they have to be cut paper thin. I did not have a mandoline slicer but I think you have to for sure have one in order for this to work.

Chow Mein // I tried this at the beginning of the school year and it was good but I didn't think it tasted amazing for the amount of time it took to make. This recipe was not one I will be reaching for anytime soon because I like quick recipes. I also didn't love the ginger taste it had I would do without that next time.

Chocolate Chip Cookie Dough Bites // I just made these last night and all I can say is OMG. I literally quickly looked up a recipe in the store last night because I had been craving something sweet all week but I didn't want to give in with candy/ice cream. So I found these super easy 5 ingredient no-bake cookie balls and wow they are good!

Chicken Pot Pie // This recipe I have not actually tried yet but I saw it on Instagram the other day and it looks so good! I want to try it out soon.

I hope you enjoyed this post! If you did I can share more recipes in the future. To be honest most times for dinners I don't follow a recipe. I just make a protein, veggie and sometimes a rice or other starch. I have been enjoying trying to coming up with things based on what I have around. I do like trying recipes for dinner but I need them to be quick and simple. As for the baked goods those I for sure need a recipe for because of the whole gluten free situation.
