Now that I fully live on my own I pretty much cookie one or two meals for dinner a week. I don't love cooking but I have found that it is a lot easier to have a list of go-to recipes. These are all recipes that I have made and really enjoy. For me, the main thing is that I don't need a ton of ingredients and the time to prep the meal is not super long. I thought it would be helpful to share my go-to recipes with you in case you need so suggestions or inspiration. As I find more recipes I like I may add to this list or do another post. I will also mention that I am gluten-free and dairy-free so all these recipes are gluten/dairy-free or can be modified to be gluten/dairy-free. Let me know if you end up making any of these recipes!
1. Orange Chicken With Rice & Snap Peas // This recipe is quite easy and so tasty. I pretty much follow the recipe other than I use gluten-free flour instead of arrowroot starch. This is just because I normally have gluten-free flour on hand so it is just fewer ingredients I have to buy. I normally pair the chicken with brown rice and snap peas.
2. Stuffed Peppers // I use to think stuffed peppers were super hard to make but this recipe is quite easy to follow and they taste so good. I like that the whole meal is done all in one with the veggie and meat. To make dairy-free I just use dairy-free cheese for the top.
3. Beef & Broccoli With Rice // This is another recipe I found easy to follow and it tastes very yummy. For this recipe, I typically leave out the ginger because I don't love the taste of ginger. I have served this with rice or cauliflower rice.
4. Avocado Pesto Pasta // This recipe is one my mom has been making for years. It is quite easy and the flavor the pesto sauce has is so tasty. I would say the key to making this turn out is you need to have a high-speed blender or food processor to get the sauce creamy. I tried making this in college with a cheap blender and it didn't turn out great. I made this about a month ago with my Vitamix and it is so good! I topped it with sun-dried tomatoes which gave it a nice added flavor. To make gluten-free just get GF pasta. I really like this one.
5. Pizza With Broccolis Kale Crust // This has been my go-to meal on Friday nights. There is no recipe to follow I just buy this GF free crust and pair it with dairy-free cheese. For toppings, I usually add peppers, mushrooms, and pepperoni. This pepperoni by Volpi is my favorite it is AMAZING on pizza! I also usually had a mix of olive oil and garlic to the crust before adding sauce for some added flavor.
6. Salmon With Mini Potatoes & Asparagus // I love salmon so one easy meal I do is salmon with mini potatoes and asparagus. To cook the salmon I just put it in my over on 415-425 for about 20ish minutes and coat the salmon with olive oil and sprinkle with Old Bay seasoning. I love using this season as it takes me back to when I lived in Baltimore. For the potatoes and asparagus I usually just put these in the oven as well and season. For the potatoes, I normally use garlic powder and I usually add some balsamic vinegar to the asparagus.
7. Zucchini Noodles With Shrimp & Pasta Sauce // Easiest dinner ever is just cooking up some zucchini noodles in a pan and topping it with cooked shrimp and pasta sauce. So simple but it really tastes good. This is my favorite shrimp to use it tastes kind of like lobster!
8. Sheet Pan Chicken Fajitas // Sheet pan recipes are so simple you really don't need a recipe. I love doing chicken with veggies and putting them in corn tortillas topped with guacamole, lettuce, corn, and beans. You could also do rice instead of tortillas to make rice bowls.
9. Tilapia With Rice Crumbs // This recipe sounds a bit weird but trust me it tastes really good. I typically don't exactly follow this recipe. I mix equal parts mayo and dijon mustard together and rub over the fish. Then I coat the fish with rice bread crumbs which are GF and some type of seasoning. I then add slices of lemon to the top before cooking. It has a nice flavor when it is done.
10. Garlic Chicken and Brussel Sprouts // I only made this recipe about twice but it has amazing flavor and is not too hard to make. I never use to like Brussel sprouts but I recently have been enjoying them more. I found the key is to blacken them when cooking.
11. Cauliflower Gnocchi With Sauce // This is my super lazy meal and all it requires is two ingredients. Trader Joe's cauliflower gnocchi and turkey bolognese sauce found in the frozen section.
